My husband, a board-certified colorectal surgeon, has seen firsthand what happens inside the body when the Standard American Diet-full of ultra-processed foods, meat, and dairy-takes its toll. From inflammation to serious gastrointestinal disease, he's witnessed how a lack of fiber, which only comes from plants, can lead to chronic illness.
